It was her goal to share her love for cats with the locals- to bring Newtown and Glebe to Epping. It would allow for other like-minded people to come together and raise awareness for rescue cats in Sydney. As a vegan, Sylvia also wanted to create a plant-based menu with gluten free options to reflect her own food ethics, and share it with the community.

As a result in 2021, the Meow Cat Cafe was born. Located right next to Epping station, she was set. Her dream to own a vegan cat cafe had finally come true.
